
Ingredients
- 1 flatbread or pizza dough
- 2-3 ripe peaches
- 4 oz prosciutto
- 4 oz fresh mozzarella
- 2 tbsp olive oil
- 1 tbsp honey
- Fresh basil leaves
- Balsamic glaze optional

Prepare the grill to a medium high heat, about 400F.

Prepare your flatbread. Brush one side with olive oil. Grill 1-2 minutes until lightly marked. Remove from grill, brush the other side with oil and set aside.

Wash and slice peaches into 1/4 inch wedges. Lightly brush with olive oil. Grill for 2-3 min per side until marked and slightly softened. Remove from grill and set aside.

Place the pre-grilled flatbread, grilled side down, on a clean surface. Tear mozzarella into pieces and distribute evenly over the flatbread. Arrange the grilled peaches on top of the cheese. Tear prosciutto into smaller pieces and place over the peaches. Drizzle with honey.

Grill the assembled flatbread by carefully transferring back to the grill. Close the grill lid and cook 5-7 minutes, or until the cheese is melted and the edges are crispy.

Remove from the grill. Garnish with fresh basil leaves and drizzle with balsamic glaze if desired.

Slice and serve immediately.
