Ingredients

  • 1 cup cassava flour
  • 1/2 cup cornstarch
  • 3/4 cup feta cheese + 1/4 cup queso fresco
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp butter, room temperature
  • 1 egg
  • 2 tablespoons milk
  • 3 cups vegetable oil, for frying

In a large mixing bowl, add together cassava flour, cornstarch, cheese, sugar, salt, baking powder, butter, egg, and milk. Mix with your hands until the ingredients are fully combined. The dough will be moldable with hands, but shouldn’t be too wet or dry.

Set up a medium pan and heat oil on high for 3 minutes, then lower the heat to medium to keep it at a constant temperature.

Divide the dough into equal portions. Roll into balls.

Fry 3 to 4 pieces at a time for about 2- 5 minutes, or until golden brown. They should rotate on their own to cook evenly, but you can also rotate them to ensure an even cook.

Remove from oil with a slotted spoon and place on paper towel to drain excess oil. Serve hot
