Ingredients
Salad
- 4 cups chopped Romaine lettuce
- 1 cup finely chopped cucumber
- 1/2 cup sliced green onion
- 1/2 cup kale
- 1/2 cup edamame beans
Dressing
- 1 cup fresh basil leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup chopped chives or green onions
- 1 small clove garlic
- 1/2 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2-4 tablespoons water, as needed for thinning

Finely chop all vegetables for the salad. Add to a large mixing bowl and set aside.

In a blender or food processor, add basil, parsley, chives, garlic, Greek yogurt, olive oil, lemon juice, salt, and black pepper.

Blend the dressing until completely smooth and bright green.

Add water one tablespoon at a time until the dressing reaches your desired consistency. Taste and adjust seasoning with more salt or lemon juice if needed.

Pour the dressing over the chopped vegetables and toss until evenly coated.
