Ingredients
- 1/2 cup butter, melted and slightly cooled
- 1 cup sugar
- 2 eggs
- Juice and zest of 1 lemon
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup milk
- 1 cup raspberries
- Glaze:
- 1 cup powdered sugar
- 3-4 tbsp lemon juice
- 1 tbsp lemon zest

Preheat oven to 350 F.

In a large bowl, combine butter and sugar until incorporated.

Add in your eggs, lemon juice, and zest. Stir until blended.

Slowly add in flour and baking powder. Mix slightly before adding in your milk.

Stir until well blended.

Fold in raspberries. Aim to break them apart while stirring.

Spray a 9″x5″ loaf pan with cooking spray. Pour batter into pan.

Bake for 1 hour or until the center is set and a toothpick comes out clean.

Remove from oven, cool in pan for about 5 minutes. Remove from pan and leave to cool on a wire rack.

Mix together glaze ingredients. Once bread is completely cooled, pour glaze over the top and spread out.

Slice and serve.
