Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup shredded sharp cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1 large apple, peeled and diced (preferably Granny Smith)
- 1/2 cup buttermilk
- 1 large egg
- 1 tbsp honey
- Extra cheese for topping, optional

Preheat the oven to 400 F and line a baking sheet with parchment paper or silicon mat. Place butter in freezer to get extra cold.

In a large bowl, whisk together the flour, baking powder, baking soda, salt and cinnamon.

Cube or grate in the butter to the flour mixture. Use a pastry cutter or your fingertips to blend until the mixture looks like coarse crumbs.

Add Cheese and bacon. Stir until well distributed.

Fold in the diced apples. Gently mix to distribute while not crushing the pieces.

In a separate bowl, whisk together the buttermilk, egg, and honey until it’s combined.

Mix the wet ingredients into the dry. Stir until just combined.

On a floured surface, turn out the dough. Pat it into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter for round scones.

Place onto prepared baking sheet. Sprinkle extra cheese if desired. Bake for 15-20 minutes or until golden brown.

Remove from the oven and allow the scones to cool on a wire rack for 5 minutes before serving.
